Ingredients for gnocchi
*1/2 kg cows ricotta
*250 grams flour
*3 eggs
*10 grams salt
*20 grams grated Parmesan
Method
*create a well of flour
*add salt, eggs & Parmesan to mix
*strain ricotta on top of all ingredients and mix well
*when you make the dough cut out long pieces of about 2cm diameter
*cut squares to your liking
*boil gnocchi until they rise to surface.
*add to sauce
Marinate, seal, cook the rabbit & sauce
Ingredients marinate rabbit
*1 1/2 kg rabbit
*3 cloves garlic
*2 onions
*6 bay leaves
*1 stick rosemary
*1 cup white wine vinegar
*water
Method
*cut rabbit into pieces
*put into tray and add all ingredients
*water to cover rabbit and leave over night
Ingredients seal rabbit
*4 tablespoons extra olive oil
*salt
Ingredients cooking rabbit and sauce
*1 leek
*10 black olives no seeds
*3 cloves garlic
*1/2 cup extra virgin olive oil
*3/4 cup white wine
*8 tomatoes no seeds no skin
*1ltr vegetable stock
*salt
*pepper
Method
*dry rabbit with a towel
*on a hot pan add oil and seal the rabbit and add a pinch of salt on pieces
*once sealed add white wine, salt, pepper, leek, tomato, olives, garlic, oil and cover with vegetable stock
*add aromatic herbs if needed
*cook for about 45 mins on low heat
*take rabbit out and de-bone
*reduce the sauce on high heat
*add rabbit back into sauce
*cook gnocchi and add into sauce.
